A salad that holds its dressing
Soft leaves and heavy dressings are usually a bad pairing — the leaf collapses before it reaches the table. Green Oak Leaf is the exception, because the lobes hold the dressing in their folds instead of letting it run to the bottom of the bowl.
What you need
- 1 head Green Oak Leaf
- 1 lemon
- 3 tbsp good olive oil
- Salt, coarsely ground pepper
- A handful of toasted hazelnuts
Tear rather than cut, dress in the bowl at the last moment, and serve immediately. TODO: replace with a real recipe from the kitchen.
