Why it tastes different

Four things a greenhouse can promise that a field cannot.

  • Never sprayed

    A sealed greenhouse keeps pests out, so nothing needs spraying to keep them out. There is no pesticide residue to wash off.

  • Cut to order

    Nothing is harvested until it is spoken for. Most orders are cut the morning they are delivered, inside 24 hours of reaching you.

  • The same in August

    Climate control means a head cut in February and one cut in August are the same head. No seasonal gap, no imported substitute.

  • 90% less water

    The nutrient water recirculates. What a field loses to the ground and the air, a closed system gives back to the next crop.

How it works

Water, light, and nothing else.

Hydroponics sounds technical. In practice it is three steps, and the whole argument for it is that you can see the roots.

  1. 01

    Sown into a plug

    A single pelleted seed goes into a rockwool cube and sits in the dark until the root breaks the coat. No soil enters the building.

  2. 02

    Set into moving water

    The plug moves into a channel where oxygenated nutrient water runs past the roots continuously. The plant takes exactly what it needs, and the rest recirculates.

  3. 03

    Cut with the roots on

    Around day 45 the head is ready. We cut it with the root ball intact wherever the pack allows, because a plant that is still drinking keeps far longer than one that isn't.
